SIMPLE DUCK TACO RECIPE

Serves: 2-4 | Prep and Cook Time: 1 hour

Do you still have a few ducks left in the freezer after this waterfowl season? This simple duck recipe is so simple but yet so tasty that you will be sure to use it a time or two!

Ingredients:

  • - Duck breast with skin on

  • - White corn tortillas

  • - Radish

  • - Cilantro

  • - White onion

  • - Fresh limes

  • - Salt

  • - Pepper


Directions:

1. Remove feathers from the duck by hand while keeping the skin intact. Singe the exposed duck breast to remove any remaining down feathers. Ensure thorough plucking around the sides and behind legs for extra skin for cooking.

2. Season duck with salt and pepper according to your taste preference.

3. Preheat a cast iron surface to high temperature. Once heated, reduce the heat and drizzle oil onto the pan. Place the duck skin side down and grill until the skin becomes crispy. Flip the duck to cook the other side until it reaches medium rare to medium doneness, or as desired.

4. After cooking the duck, coat the tortillas in duck fat and grill them to your preference.

5. Once the duck is cooked, place it on a cutting board with the skin side down. Slice it into strips or cubes.

6. Assemble the duck tacos with cilantro, onion, and radishes. Squeeze fresh lime juice over the tacos. Enjoy your delicious duck tacos!
