BLACKEN MAHI TACOS RECIPE

POV: You just departed from an incredible deep sea fishing trip with a cooler full of Mahi Mahi filets to take home. Now you are wondering, how do I cook it? We are here to help! 

Mahi Mahi are known for their vibrant colors of blues, greens, and yellows making them a popular sport fish among fishermen. These fish are considered an eco friendly seafood as they reproduce and grow fairly quickly. 

The meat on these fish happen to be just as awed after as their looks! After cleaning, an average Mahi Mahi will leave you with about 5 lbs of meat. These filets will be firm and pale pink, while turning white and flakey once they are fully cooked.

These firm filets provide you with a great opportunity to play with some fun recipes you might not normally use with fish.

Our Blackened Mahi Taco recipe is sure to pack a punch for your next taco night. It is full of fresh colorful ingredients that will leave you feeling full and guilt free. Mahi is a great protein source rich in a variety of B vitamins. The combination of veggies we use to garnish on top, are great sources of fiber promoting gut health and preventing heart disease.

INGREDIENTS:

BLACKENING SEASONING

MAHI FILETS

CABBAGE MIX

CILANTRO

RED ONION

TOMATO

LIMES

SALT + PEPPER

QUESO FRESCO

AVOCADO SALSA

CORN OR FLOUR TORTILLAS

OIL OR NON STICK SPRAY

BLACKENING SEASONING:

3 TBSP SMOKED PAPRIKA

2 TSP ONION POWDER

1 TSP GARLIC POWDER

1 ½ TSP SEA SALT

1 TSP BLACK PEPPER

1 TSP DRIED THYME

1 TSP DRIED OREGANO

½ TSP CAYENNE PEPPER

CABBAGE CILANTRO SLAW DIRECTIONS:

In 1 bowl combine cabbage mix and chopped cilantro to your preferred ratio. Sprinkle salt and squeeze fresh lime over the top and toss. Add as much or as little as you prefer and let rest. This will make you Cabbage Cilantro Slaw to garnish on your tacos.

PICO DE GALLO DIRECTIONS:

In another bowl, combine diced tomatoes, red onion, and chopped cilantro. Add salt + pepper to taste and squeeze fresh lime over the top. Toss ingredients to disperse ingredients evenly and let rest. This will make your mild Pico De Gallo.

MAHI FILET DIRECTIONS:

Start by rinsing and drying off your Mahi filets with a paper towel. Once dry, generously sprinkle blackening season onto Mahi filets. 

Bring pan or flat top grill to medium-high heat. Add oil or non-stick spray to the surface of the pan or grill before placing filets on the hot surface. 

Each filet will only need to cook for about 3-5 minutes on each side, only flipping once. 

ASSEMBLE:

Heat up your tortillas on the warm surface of your pan or grill for crisp texture and flexible hold. 

Place desired amount of blackened mahi filet on tortilla. Garnish tacos with the Cabbage Cilantro Slaw and Mild Pico De Gallo you made earlier.

Sprinkle Queso Fresco crumbles across all toppings and drizzle desired Avocado Salsa across the top for extra creaminess. Enjoy!
